what is your favorite go to meal when you are in a hurry?when finances are short?you need to cut calories? mine is my egg mcmuffin-use a whole wheat  split english muffin toasted(hold the butter)put a poached or fat free "fried" egg atop a fat free cheez slice atop each muffin half-serve with lo sodium v8.

Dulcy -- I do that EXACT same meal!  And I add a dab of dijon mustard and fat free mayo.  V8 at the side makes sense for the veggie requirements.  So funny that I do that exact same thing when I am in a rush and want something filling but healthy!

Dulcy---fun thread.


I sometimes make up a big batch of the following on a sunday, and then depend on it for fast, easy, cheap, healthy, yummy lunches all week.


I buy a roaster chicken already cooked and lose the skin. (Of course you can get boneless, skinless chicken breasts and cook them yourself, but for 6 bucks and moister chicken, I let someone else do the work.)

Then I shred it, add low fat mayo sparingly (sorry gals, can't do the fat free, doesn't taste good to me), mango chutney, celery, chopped shallots and a hint of ginger for a different kind of chicken salad.  Then I dish out  a scoop and sprinkle it with cashews, or I spread it on sesame WASA crackers.

Dulcy and Sam- I do the same thing except I use salsa and "scramble" an egg in the microwave for 60 secs.  It fits perfectly in the english muffin.  I don't alway use cheese.  sometimes I mix in finely chopped veggies instead

rubyray, wow!!  that sounds fantastic!  I love chicken salad...mine is with mayo, celery, onion and  red currie.  I don't know if DH would go for your version but I sure would...maybe I'll sneak in the mango chutney and before you know it, he'll be hooked!  It's worked before  ;)  !  

My "go to" meal is usually a 6" flour tortilla heated  up in a frying pan with whatever happens to be in the refrigerator or the cupboard.  The list could include a mix of cheese, black beans, onion, tomatoe, salsa, a fried egg, spinach, leftover chicken or beef, sometimes vegetarian sometimes not....just whatever.  Great way to clean out the refrigerator.

on the weekends I sometimes make a batch of the turkey chili (recipe I got from clx/chalene, very easy to make) and it lasts me the week and is very filling and healthy. I try to buy the ground turkey on sale and freeze it, the rest is cheap.


oatmeal, whey protein and peanut butter is another favorite and pretty cheap.

I make a Boca Burger on whole wheat english muffins. Lately I've been throwing green vegetable, berries into low cal fruit juice into a blender with ice.  Really delicious.  I use a ton of spinach, zuccini or broccoli (2 cups) I like vegetables but it has been so hot in NY/NJ cant bring myself to cook.

Quorn stir fry. BAg of frozen veggies in the pan takes not even 10 min to be done quorn goes in microwave for 2 min put them together for 1 and done! I use a marinade jsut ot add flavor. Loves like you spent 45 minutes at least and you did not! Plus it's vegetarian with lost of protein! Im big on steam veggies in microwave for 2-4 minutes and use Uncle Bens 90second rice (comes in a bag you stick in microwave for 90 sec has 2 servings) buy the whole grain it has almost no sodium the other kinds are through the roof! and mix! Takes at most 5 minutes!

My favorite quick fix and cheap meal--in addition to the the egg-muffin combo that Dulcy mentions--is apple slices dipped in peanut butter (the natural runny kind that you have to stir).  Sheer bliss!  More voluptuous than a caramel sundae!  I know the peanut butter doesn't qualify as low fat, but I need the extra calories when this is substituting for a meal.  (And there's no cholestrol in natural peanut butter, despite the fat content.)
